一、以主料为主、配料为辅的翻译原则

1、菜肴的主料和配料

主料(名称/形状)+ with + 配料

二、以烹制方法为主、原料为辅的翻译原则

1、菜肴的做法和主料

做法(动词过去分词)+主料(名称/形状)

2、菜肴的做法、主料和配料

五、体现中国餐饮文化,使用汉语拼音命名或音译的翻译原则

1、具有中国特色且被外国人接受的传统食品,本着推广汉语及中国餐饮文化的原则,使用汉语拼音。如:饺子Jiaozi

花卷Huajuan

烧麦Shaomai

2、具有中国特色且被外国人接受的,使用地方语言拼写或音译拼写的菜名,仍保留其拼写方式。

六、可数名词单复数使用原则

菜单中的可数名词基本使用复数,但在整道菜中只有一件或太细碎无法数清的用单数。如:蔬菜面Noodles with Vegetables

七、介词in和with在汤汁、配料中的用法

1、如主料是浸在汤汁或配料中时,使用in连接。

如:豉汁牛仔骨Steamed Beef Ribs in Black Bean Sauce

2、如汤汁或蘸料和主料是分开的,或是后浇在主菜上的,则用with连接。

如:海鲜乌冬汤面Japanese Noodle Soup with Seafood

八、酒类的译法原则

进口酒类的英文名称仍使用其原英文译法,国产酒类以其注册的英文为准,如酒类本身没有英文名称的则使用其中文名称的汉语拼音。

公示语汉英翻译原则浅析 摘要:随着中国国际化地位的加重,越来越多的城市和单位对其所有公示语进行英文的标识。方便外地游客的同时,提升国际地位。本文从公示语定义及功能入手,探析公示语汉英翻译原则,为准确的公示语汉英翻译提供借鉴。 关键词:公示语;翻译原则 一、公示语概述 (一)公示语的定义 公示语是用于公共场合,以达到某种特定交际目的的特殊应用文体。其应用范围非常广泛,几乎涉及到我们日常生活的各个方面,如路标、广告牌、商店招牌、宣传语、警示语、旅游简介等。它或用寥寥数词、简单明了的图示,或文字与图示相结合等方式把必要的、有用的信息传达给大众,能够在必要的场合帮助在华外国朋友更方便地学习、工作和生活。 从广义而言,公示语可分为通用与专用两种类型。通用公示语是指具有国际普遍使用意义的公示语;专用公示语是指政府部分、社会团体、企业商家等开展社会活动和业务活动所使用的公示语。 (二)公示语语言特点 通过大量公示语范本得知,公示语语言的主要特色如下: (1)服务、指示、说明性质的公示语大量使用名词。如:售票处Ticket、站台Platform、问讯处Information等。 (2)限制性、强制性的公示语大量使用动词、动名词或祈使句。如:禁止停车No parking、小心碰头Watch your head、请勿乱扔Please do not litter等。 (3)各种短语也大量应用于公示语。如:右侧行驶Keep right、油漆未干Wet paint等。 (4)在一些公共场合也使用缩略词。如:贵宾VIP、提款机ATM等。 (5)避免使用生僻词语、古语、俚语等,尽量使用常用的词语。如:FRAGILE表小心易碎,LOST & FOUND表失物招领等。 (三)公示语的应用功能特色 公示语提供的是一种信息服务,关键在于传递信息,让读者去行动、去体会,在实际应用中具有四种突出的应用示意性功能,即指示性、提示性、限制性和强制性功能。 第一:指示性公示语体现的是周到的信息服务,没有任何限制、强制意义。他的作用只是提示公众注意其所在场合的特点。因此,语言应用也不一定要求公众去采取何种行动,其功能在于指示服务内容。如:紧急出口Exit、试衣间Fitting room、候车室Waiting room、问询服务Information等。 第二:提示性公示语没有任何特指意义,仅起提示作用,但使用广泛,用词比较婉转含蓄。如:小心脚下Watch your step、请系好安全带Please wear the seatbelt provided;请按按钮Please press for assistance;暂停服务Out of service等。 第三:限制性公示语对相关公众的行为提出限制、约束、要求,语言应用直截了当,但不会使人感到强硬、粗暴、无理。如:残疾人通道Handicapped only、请将童车留存此处Please leave your buggy here、仅限特许车辆Authorized vehicles only、送客止步Passengers only等。 第四:强制性公示语要求相关公众必须采取或不得采取任何行动,语言应用直白、强制,

K ey W ords:pub lic signs;C-E translati on;tran slati on p ri nci p l es 中图分类号:H059文献标识码:A文章编号:1004-6038(2008)02-0047-04 1.引论 城市的标识、指示牌、路牌、标语、单位名称、通告等统称为/公示语0。公示语是国际化都市及国际旅游目的地语言环境、人文环境的重要组成部分。随着我国国际化进程的加快,公共场所使用英文公示语的现象日益增多。设立英文公示语是国际大城市的重要标志,大大方便了外国游客和商人。但是,我们发现公示语的汉英翻译尚存在许多问题,部分问题还比较严重。即使在北京、上海这样的国际化大都市,情况也不容乐观。/停车0牌翻译成/Park i ng Th is W ay0; /收银台0翻译成/C ash i er Des k0;/男厕所0译成/W.C.M en0之类的情况屡见不鲜。这与我国社会经济、文化的高速发展,对外交流的日益扩大是极不相称的。 2005年9月25-27日在北京第二外国语学院举行的首届全国公示语翻译研讨大会围绕/全球化的语言环境下的公示语翻译0展开了热烈的讨论。会上,戴宗显指出:/公示语的翻译虽然区区几个字,绝不是任何学过外语的人都熟悉的。0国内不少学者对公示语做过研究(如贺学耘,2006),但是很多研究主要集中在公示语的功能特色和语言风格上,在公示语的翻译方面则主要是纠错和改译,并没有提升到理论的高度。基于这样的背景,笔者尝试在本文中提出公示语汉英翻译的原则,从理论的高度指导翻译实践,具有理论与实际意义。 2.公示语汉英翻译原则的空缺 我国的翻译理论研究源远流长。不论是极具影响的近代严复的/信、达、雅0,还是现代傅雷的/神似0、钱钟书的/化境0,都在翻译界产生过强烈影响,对翻译实践起着积极重要的指导作用。但是,我们也应看到,这些标准都是针对严肃的正式翻译,尤其是对文学翻译而言的,因此,他们对广泛用于社会生活的应用文体翻译很少论及,因而拿这些文学翻译理论用于应用翻译,犹如隔靴搔痒,缺乏有效性和针对性。 纽马克(Ne wm ar k,2001)在5翻译教程6(A Te x t B ook of Tran sl a-tion)一书中,根据布勒的语言功能理论将所有的文本划分为三大类型:表达型文本(expressi ve text)、信息型文本(i n f or m ati ve text)和号召型文本(或呼唤型文本)(vocati ve text)。号召型文本强调以读者为中心,其主要目的是呼唤人们行动、思考或感受,实际上是以文本要求的方式做出反应。公示语文本的最直接的目的是在引起读者注意的前提下,将信息传达给读者,并给读者留下深刻的记忆,继而让读者采取行动)))按照公示语的指示去做。公示语文本应属于号召型文本。这种文本类型的划分对翻译理论的研究有助于帮助我们解决翻译理论中一些有争议的问题,尤其是翻译标准问题。 奈达(N i da,1964:159)在5翻译科学探索6一书中指出,/在动态对等翻译中,译者所关注的并不是源语信息和译语信息的一一对应关系,而是一种动态关系,即译语接受者和译语信息之间的关系应该与源语接受者和原文信息之间的关系基本相同0。他(1969:25)把动态对等定义为:译语中的信息接受者对译文信息的反应应该与源语接受者对原文的反应程度基本相同。可见,奈达的翻译理论强调的是两种语言的接受者的感受应该大致相同,追求的是两种效果之间的对等,强调以读者为中心。一些学者认为奈达理论不能用于指导文学翻译,却能指导非文学翻译,如科技翻译。/奈达理论对宣传告示、广告或某些宗教文本有指导作用0(Gen tzler,1993:60)。奈达的动态对等与读者反应理论对公示语翻译原则的探索有很大理论价值。 3.公示语汉英翻译的原则 在公示语功能特色和语言风格的基础上,本文以纽马克的文本分类作为理论依据,试探性地提出公示语汉英翻译三原则:统一(con-sistency)、简洁(concis en ess)和易懂(co mp rehen si b ili ty)。这三个翻译 作者简介:刘法公(1958-),教授,华东师范大学博士生,硕士生导师,研究方向:商贸翻译理论与实践,汉英比较与翻译;徐蓓佳(1981-),硕士,研究方向:专门用途英语理论与实践,商贸翻译理论与实践 收稿日期:2007-11-11(修改稿)
