番茄红素的来源有植物提取法、化学合成法、微生物发酵法。
相较前两种方法,微生物发酵法是生产番茄红素最适合的方法。
目前目前研究应用较多的是三孢布拉氏霉菌。
综述了通过构建番茄红素高产菌株、优化番茄红素发酵生产工艺提高番茄红素产量,最后提出目前存在的问题。
关键词:番茄红素,发酵生产,高产菌株,发酵工艺Study on Lycopene Fermented from Blakeslea TrisporaAbstract: Lycopene is a kind of important fat-soluble carotenoid, which has many physiological functions including antioxidant function, anti-cancer, enhance immunity, protect the skin. Lycopene has a wide range of application value in food, medicine and other fields. The source of lycopene includes plant extraction, chemical synthesis and microbial fermentation. Compared with the former two methods, the microorganism fermentation method is the most suitable one for the production of lycopene. At present, Blakeslea trispora is applied widely.
