金属污染途径及关键控制点金属污然途径在肉类生产及加工中,金属杂质主要有三个面的来源:一是原料生肉中的金属标签、针头、金属丝等;二是操作工人的私人用品,如硬币、钥匙、发夹、图钉等;三是生产过程中机器设备产生的杂质,如生肉在切块、粉碎或搅拌过程中产生的机器损伤所造成的金属碎屑等。
