2、将龙虾头、尾各自定形,滚熟捞出,摆放在碟的一端,用炒过的西蓝花铺底。
大龙虾加盐、鸡精捞匀,再用鸡蛋黄、湿粉10克翻拌,拍上香炸粉,用生煎炸至橙黄色捞出,在碟的另一端排污为一圈。
3、烧镬下油,放进龙虾肉泡油至仅熟,倒在苕帚里,随后落蕃薯粉、蒜茸进行爆香,放进已爆熟的露笋粒、胡萝卜粒、龙虾肉,用芡汤、湿粉打芡,落杏仁、葱榄、色拉油、白胡椒粉,加包尾油炒匀放到正中间便出。

制作:1、将牛棒骨清洗干净,擦干水分,入250度的烤箱中烤到金黄色。
2、将番茄酱倒入盘中,入220度的烤箱中烤成褐红色(经过烤制,番茄酱中的酸味会挥发掉,从而保证做好的烧汁不会太酸)。
3、桶内下清水,下牛棒骨、番茄酱、蔬菜、红酒小火熬8小时,至汤汁只剩10千克时,停火捞出渣滓,加入盐、白糖、老抽调味即可。
自制烧汁口味咸香复合。
黑醋汁配方:将50克德国黑醋入锅,下10克白糖,小火熬1分钟左右至浓稠即可使用。
制作方法:(1)将芥末粉入小碗。
慢慢倒入开水,边倒边搅。
至成膏状。
用保鲜膜覆好。
常温下放置2小时至发酵,即可食用。
发酵后的芥末膏味道更浓。
(2)将牛肉修成200克/个(直径为8厘米、高为6厘米左右)的圆柱形,加入盐、黑胡椒碎、老抽、生粉腌制20分钟。
(3)锅下黄油20克,烧热后下小牛肉,小火煎5分钟左右至五成熟,取出放入烤箱(上火180度,下火120度)中烤5分钟至七成熟,取出备用。
(4)平锅内放入黄油8克烧热后,下洋葱炒香,放美极鲜、自制烧汁、黄芥末膏、白糖调匀下牛肉小火烧40秒左右至收汁(烧制时间不可过长,否则就咬不动了)。
捞出入盘,用炸藕片和时蔬点缀,然后将黑醋汁挤入盘底做装饰即可。
