The dietetic culture

The difference of zones causes the difference of dietetic culture,and it comes from

diverse styles of thinking and philosophy.Here I will talk about a feast of the following

two zones—China and the west countries.

Our people often connect food with its taste and affection to the body. Our country

has a great civilization of history ,including the dietetic history .So there are lots of

characters from different points of view.

First,multiplicity of styles .Thanks to the amplitude of our great motherland and its

vast territory and abundant resources,different customs and climates affect local tastes.

It has been existed for so long time that we can distinguish a man about his

motherprovince from his taste.The south Chinese people usually takes rice for their

main staple food and people in the north takes flour.We can alse divide the tastes into

four big parts: sweet for the south ,salty for the north ,acid for the east and hot for the

west. For these reasons,you won’t be surprised when hearing or seeing “正宗川菜”、“风味北京小吃”……Remember that:a place can be famouse because of a piece of snack.

Second,we takes different food acrrodind to some circumstances in the four seasons.

Generally speaking,the snakes taste denser in winter and compared more insipid in

summer.In summer, we usually eat some fruits cold and dressed with sause.

Sometimes, I append some suger into the watermelon so it tastes more sweet.In winter,

we always get together and have a feast around a chaffy dish.By the way, the charry

dish here in Chongqing is qiute famouse in China even the world.In my eyes, these

phenomena can be an embodiment of adaption to the nature. We can use the hot food

to defend the chilliness and the cool food to clear the hot summer.

Third,they will pay more attention to art when our cookers operating his tools.A good

cooker here when we assess his work, the beauty of a dish can’t be ignored. The master

often tells his prentice that an excellent dish can bring people a comfortable and good

mood.So an excellent cooker must pay attention to the colors, smell, taste.No matter

the material is a carrot or a cabbage,it has its function in a dish, they can also be an

important part of a perfect dish。

Then we give a name to a dish in a humor way.The name is produced from its

materials and special meanings.Sometimes,we also name it for a man or a fairy story.

Here ,I have searched some names though the Internet:quanjiafu(“全家福”)、shizitou“狮子头”、douporou“东坡肉”、guifeiji“贵妃鸡”、diaochandoufu“貂蝉豆腐”、xishishe“西施舌”、zhaojunjia“昭君鸭”、jiaohuaji“叫化鸡”…… Some famous novels like 《射雕英雄传》relates to the name .Its clever heroine HuangRong name her dishes elegantly.

The most important is what? Chinese meal is related to the body’s health

directly.Since Zhou Dynasty, our ancestors have payed attention to the relationship

between nutrition and meals. Bread is the staff of life.The ancient doctors especially

notice the connection of food and diseases.In Zhou Dynasty,we even divided doctors

into four part and the doctors who were in charge with food is one part of it. They told

the later generations that food is more important than the medicines.We eat a sume of

food every day, but we take medicine when we are just ill.

The civilization in the west is extremely different. We can give a definition that it is the

addition of inspirit and matter that the people in the west have been creating and

stimulating.It has comparetively rich history characteristic and system frame which

affect the dietietic civilization biggishly.

First, the worker is keep improving when producing the food for his buyers. Because

they are always pursuing the perfection, so their work appeals to the whole world.They

also attach importance to the cooperation of the cate, good name and beautiful area.

Second,there are four sorts if you want to classify the west recipes. Cooking

technique, cooking culture and art, cookiing science, colligation. It has its own view of

zoology and balanced nutrition.

Third, various folk-customs.Generally speaking, the people give priority to the meat,

and the vegetables for the complement. Well, they often enjoy themselves with a big

feast in the red days to beg on the God. In the socility, what they notice most is “Ladies

first”,which we can get the information in many films of the west countries.

Though west countries have so many common grouds, different coutries have their
