The Barossa Valley, with its strong German heritage is a place ful l of character. Most renowned for its opulent styles of Shiraz which is the best in the world, the region also produces fine examples of Cabernet Sauvignon and Chardonny. The climate of the region has often been unfairly characterised as very warm but in its lower parts it is only moderately so and at higher altitudes quite cool. The region doe s have a wide diurnal temperature range, higher maxima, more sunshine and a much lower humidity and rainfall. All of this adds up to a continental climate ideal for full-bodied red wines, excellent fortified wines and generally robust white wines.[Wine Analysis]Alcohol Level: 14.16%TA: 6.17g/LpH: 3.59VA: 0.32g/LResidual Sugar: 1.17g/L[Tasting Note and/or Wine Making]Each vintage we keep certain parcels of fruit separate and release them as individual wines. The region has a coo l to warm continental climate, with a high diurnal range. The terra rossa soil produce t he Australia’s most outstanding Cabernet Sauvignon wines. This clay sits on top of w elldraining limestone and quite often breaks though the red soil to produce a stony loo king vineyard. Rain easily flows through to the limestone and therefore the soils are w ell drained, another aspect for guaranteeing high quality Cabernet Sauvignon grape pr oduction.We have long nurtured our growers in this outpost of cool climate winemaking. The tr ansitional soils typically produce aromatic wines of depth and complexity and this wi ne is no exception. Not only the region provides the best riesling, chardonnay, shiraz and cabernet sauvignon in Australia, also owns some of the world best awards for these varieties.[Wine Analysis]Alcohol Level: 12.9%TA: 6.6g/LpH: 3.36VA: 0.28g/LResidual Sugar: 7g/L[Tasting Note and/or Wine Making]Layered, elegant and refined, the sophisticated palate combines a lemon minerality and persistent melon characters with stylish and subtle oak flavours. In addition to this well-integrated oak, lees stirring has added a delightful texture and mouthfeel, creating a wine of balance, complexity and exceptional length. This is a fine and superbly balanced Chardonnay that captures the essence of its cool-climate origin. Colour: Attractive pale-medium straw colour with green hues.Aroma:Ripe stone fruit, melon and peach abound in this superb Australian Chardonnay.Palate: The palate has good weight, peach and melon flavours dominating with a hint of citrus, tasty vanillin oak, good length and a soft smooth finish.Food Match: Chardonnay will pair well with poultry dishes, pork, seafood or recipes that have a heavy cream or butter base. Soils are predominantly red sandy loam over limestone, on gently undulating east west ridges.The grapes for this wine were picked at night to make sure that they were as cool as possible. Crushed to modern rotary fermenters the grapes were then allowed to macerate for 2 days before inoculation and fermentation. Pressed off skins 7 days laterand allowed to go through the second malolactic fermentation. The wine has then had minimal handling prior to filtration for bottling in our BRC accredited winery. Colour:Deep red in colour, with some purple huesAroma: Complex aromas of red berry integrate perfectly with more savoury and red pepper notes with a gentle touch of oak.Palate:The rich mouth filling palate has flavours following through from the initial impression of berries and more complex capsicum family characters with delightful savoury notes, clean tannins and soft background oak on the finish.Food Match: Red meats, flavorful and heartier (red) pastas, lamb, strong-flavored cheese, and chocolates (especially dark).。

一、按色泽分类1、红葡萄酒:选择用皮红肉白或皮肉皆红的葡萄,采用皮、汁混合发酵,然后进行分离陈酿而成的葡萄酒,这类酒的色泽应呈自然宝石红色、紫红色、石榴红色,失去自然感的黄褐、棕褐或土褐颜色,不符合红葡萄酒色泽要求。
2、白葡萄酒:用白葡萄或皮红肉白的葡萄分离发酵制成。
酒的颜色微黄带绿,近似无色或浅黄、禾秆黄、金黄。
凡深黄、土黄、棕黄或褐黄等色,均不符合白葡萄酒的色泽要求。
3、桃红葡萄酒:用带色的红葡萄带皮发酵或分离发酵制成。
酒色为淡红、桃红、橘红或玫瑰色。
凡色泽过深或过浅均不符合桃红葡萄酒的要求。
这一类葡萄酒在风味上具有新鲜感和明显的果香,含单宁不宜太高。
玫瑰香葡萄、黑比诺、佳利酿、法国蓝等品种都适合酿制桃红葡萄酒。
另红、白葡萄酒按一定比例勾兑也可算是桃红葡萄酒。
二、按含糖量分类1、干葡萄酒(dry)糖含量小于或等于4g/L的葡萄酒,或者当总糖和总酸(酒石酸,下同)的差值小于或等于2.0g/L,酒的糖含量高达9.0g/l。
这种类型品尝不出甜味,具有洁净、幽雅、香气和谐的果香和酒香。
