CHANGSHA UNIVERSITY OF SCIENCE & TECHNOLOGY 毕业设计(论文)题目:日产300吨酸奶工厂设计学生姓名:潘兵远学号:200935090228班级:食品0902专业:食品科学与工程指导教师:李赤翎2013 年 5 月日产300吨酸奶工厂设计学生姓名:潘兵远学号: 200935090228班级:食品科学与工程09-02班所在院(系):化学与生物工程学院指导教师:李赤翎完成日期: 2013年5月日产300吨酸奶工厂设计摘要酸奶工厂设计目前国内设计部门还没有专门的研究,尤其是如何生产高品质产品还没有相关的经验,尤其在生产工艺、自动化控制等方面存在着比较大的脱节,因此现在设计部门仅仅进行土建、通风、照明以及水电气冷等公用能源的设计,而生产工艺、设备选型、现场安装、自动化系统等核心的部分由国外供应商完成,因此很少有国内企业自己完成比较大的项目,这样给国内的乳品发展造成缺乏核心技术,简单依赖于进口的局面,要提高自身的技术水平,就需要研究基础的方法,掌握乳品加工的核心技术。
另外,由于在国外各种能源的价格和劳动力的价格昂贵,国外在能源消耗、环保和自动化水平方面都要比国内有很大的领先,这正是需要学习提高的地方。
本设计是在开展可行性研究、查阅大量资料、详细工艺论证后进行的。
进行了物料衡算、热量衡算、设备选型、经济技术分析,绘制了工艺流程图、车间设备平面布置图、总平面布置图。
秉承以人为本、安全第一、质量至上的设计理念,力求生产向着自动化、机械化、连续化、现代化方向发展,车间布局力求科学、规范、灵活;充分利用原辅料,降低生产成本,增强企业的市场竞争力。
结合最佳的生产工艺,同时节能降耗、关注环保,采用部分节能设计和设备,设计一个高品质酸奶的全自动化、节能、环保型工厂,目前根据市场需求,企业通常在日产300~500吨或以上的工厂采用自动化的方式进行,并且该产量能够满足城市型冷链产品分销的产量,因此本论文将以日产300吨酸奶为设计基础进行设计。
关键词:高品质酸奶、车间设计、工艺设计、工厂设计AbstractY oghurt plants of design has not yet specialized research in the domestic design sectornow,in particlar,do not have the experiences how to produce high quality products,especialythere is a relatively large out of touch in the production process and automatic control. So nowdesign sectors just design in the civil engineering,veniilation, lighting and energy utilities,but the core parts come from foreign suppliers,such as produetion proeesses,equipment selection,on-site installation,automation systems.So very few domestic enierpriseshave completed their relatively large projects.It makes a lack of core technology and just reliance on imports in domestic dairy development.To improve their technological level it based on the need to study the way to capture the heart of dairy processing teehnology.Inaddition,since he foreign keep ahead than the domestic in energy consumption,environmental protection,it is the need to study and improve to us.This design is completed after a feasibility study, search large amounts of data and make a detailed evaluation process. Including the material balance, heat balance, equipment selectionand economic and technical analysis. The diagram of process flow diagram, the diagram of workshop equipment layout, the diagram of workshop equipment, the diagram of generallayout plan.In the design, we make sure people-oriented, the safety and quality are first. The production strive towards the automation, mechanical, continuous and modernization direction. The design is to make production scientific and standardized and flexible. In order to increase market competitiveness of the enterprise. we make full use of raw materials and lower production costs.which combining the best of production teehnology,energy- saving,environmental coneerns,and design a hihg quality yoghurt-wide automation, enegy-saving and enviroment-friendly plant .accordng to the current market demand,enterprises usually use automation manner in daily output of 300 to 500 tons and the output can also ,meet a frozen products chain in a city, so this paper will design based on the daily output of 300 tons of yoghurt.Keyword: hing-quality yoghurt, workshop design,process planning, plant design目录摘要.........................................................................!
