苏丹红的毒性研究进展魏明;侯进【摘要】苏丹红是人工合成的偶氮化合物,属工业染料,不能用作食品添加剂.苏丹红在体内能够代谢成相应的胺类物质,主要包括苯胺、萘酚等,均为有毒的有机化合物.食品中的苏丹红给人类健康构成了潜在的严重威胁.大量毒理学研究证实,苏丹红有致癌性,遗传毒性,代谢产物毒性,致敏性等毒性作用.苏丹红与食品安全及人类健康息息相关,只有加强对苏丹红的认识研究及卫生监督,才能更好地保障食品卫生安全和人类健康.%Sudan is synthetic azo compound and a kind of industrial dye, which is not allowed to be used as food additives. Sudan can be metabolized in vivo into corresponding amines such as aniline and naphthol, which are all toxic organic compounds. Current study shows sudan in food poses a potential serious threat to human health. A large number of toxicological studies confirmed that sudan has carcinogenicity, genotoxicity, metabolite toxicity and allergenicity.
