Lycopene:New Addtive for Processed Meat SHEN Jiachuan,DAI Qicheng,HAN Pengfei (CollegeofFoodScienceandTechnology,Southwest University,Chongqing 400715,China) 

Abstract:Lycopene is a nature pigment and an antioxidant,and it is healthy to human body.Lycopene is a potential additive for processed meat.This paper reviewed the distribution of lycopene in the nature world and individuals inside either,the physicochemical and antioxidation properties,introducing the hygienical functions and research its progress in recent years. Key words:lycopene;antioxidation;processed;meat 

_'-he color of processed meat generally depends on the ●accession nitrate or the nitrous acid salts.through curing the meat could present attractive color.However because of the more and more public concerning with food safety,the application of chromogenic reagent for food color will be confined much more strictly.From the health,as well as enterprise’s long-term benefits,we need to develop a new type of additive agents to reduce the use of the current chromogenic reagent,or replace the existing agent. Lycopene is not only one kind of carotenoids but also the precursor of vitamin A,which was a de印red pigment first ex仃acted by Hartsen in black yam root.and later a number of scholars have made a thorough study.Schunck found there were something different between lycopene and other carotenoids in the spectrum,and he officially named it as lycopene in 1903. In recent years,it founds that lycopene has strong antioxidant activity and inhibits eel1 proliferation. enhances the body immunity,reduce DNA damage and other effects through a series of research,in addition lycopene is a natural pigment,so lycopene would be a potential meat additive. 1 The distribution of lycopene l。l The distribution of lycopene in nature Like as other carotenoids,lycopene is a natural pigment synthesised by plants or microbials.It is commonly found in red fruits and vegetables,there is a relationship between the content of lycopene and the type and maturity of fruits and vegetables.Kirk and Tilney-Bassett(1 978)did some researches on production mechanism of lycopene in plants,and they found that during the process of tomatoe ripening,when the chlorophyll take into chromoplast,the lycopene content had increased significantly[ .As stated 

above,lycopene exist not only in the tomato,but also present in other plants or microorganisms,the content even more than tomatoes.Perkins et al(2003)found that the content of lycopene in watermelon is not only very large, while it can make people very good absorption by non— processed【lj6J. 

1.2 nle distribution of lycopene in human body 

Parker(1988),Kaplan(1 990),Schmitz(1 991), Nierenberg(1992)have studied the content of lycopene in different tissues and organs of body The data show that lycopene in the adrenal gland,testis,liver and prostate with a higher content【 。 . 

2 Physical and chemical properties of lycopene 

Lycopene is a dark red fat-soluble pigment,molecular formula C4oH56,molecular weight 536.85,melting point 1 72—1 75℃.insoluble in water.Difficult to dissolve in the methanol and ethanol,soluble in ether and petroleum ether,oil solution shows yellow orange. Lycopene belongs to the carotenoid family,and it contains ll conjugated double bonds arranged linearly. Normally,lycopene has 2048 kinds of geometry,but due to steric effect,it hasn’t multi—isomers.From now on,people has found 72 species.Lacking of 13-ionone ring structure, it is not vitamin A precursors. Lycopene exists mostly in nature with all— trans structure with stably,which has been found by

Giving an electron to oxygen molecules then produce a superoxide anion,then gaining electron and two hydrogen ions,this will produce a hydrogen peroxide.When it combined with a peroxynitrite anion,it will release a very active hydroxyl free radica1.The hydroxyl radical will quickly react with available nearby macromolecules,thus damages proteins,fats,DNA and other macromolecular. Polyunsaturated fatty acids react easily with lively free radical,giving rise to free radicals chain reaction which causes oxidative rancidity of fat. The antioxidant mechanism of lycopene includes physical and chemical methods.Under the ph),sical mode, lycopene will maintain its integrity.By accepting the energy of singlet oxygen,lycopene would be converted into excited triplet,while the excited state of oxygen change into the base after the loss of energy,the excess energy of triplet state lycopene would be released as heat through a certain way(vibration,et a1)into the surrounding environment,then it transfers into the ground state again,after the lycopene participates in new round of quenching reaction of singlet oxygen;When under the chemical mode,lycopene would be damaged,it directly react with a number of reactive oxygen fragments,by that way it plays the role of antioxidant. Lycopene has significant antioxidant properties. Mascio et al(1989)found that the antioxidant properties of lycopene is the strongest,compared with other carotenoids.Such as the antioxidant properties of lycopene is twice more than p—carotene under the same conditions. And they found this phenomenon may be related to the existing of ̄-ionone ring through experiments.Open loop configuration seems to be able to increase antioxidant activity.It may be because the energy level of the open— loop structure is relatively low,and more receptive to the energy from the active free radicals.Similarly,people found that the antioxidant properties of lycopene is over 1 O0 times than vitamin E.Usually it considered that the antioxidant properties of lycopene is related to the contains of conjugated double bonds,and this is why the antioxidant properties of lycopene much more superior than the other one[6-81. In general,Because lycopene is extremely pro— lipid organic maReL it is mainly present in the membrane structure of body,the reaction between lycopene and reactive oxygen species mainly occurs in the membrane hydrophobic core region.But when there is amphiphilic proteins,lycopene can reaches the film surface,meantime carry on many reactions in water environment.It found that under the fat—soluble environments antiOxidant activity of lycopene higher than it in the water-soluble environments[9】.
