One of my favorites is "ganfanmian," which are thick, chewy noodles served in a delicious broth with lots of vegetables and pork. The broth has such an incredible savory flavor from simmering for hours with all the meat and veggie scraps.Another incredible noodle dish is "jilimen" – fresh noodles served cold with a sesame sauce, cucumber, carrots, and other veggies. The flavors are so refreshing, especially on a hot summer day. I always look forward to eating jilimen during summer vacation from school.Ganzhou is also known for its "gan pork", which is a special way of curing and preserving pork to make it extra flavorful and tender. There are many different dishes featuring gan pork, like pork belly braised in a sweet soy sauce or shredded gan porkserved over rice. My uncle owns a gan pork restaurant and his braised pork belly dish with hard boiled eggs is out of this world!One of my other favorite Ganzhou meat dishes is "yecha duck." This is a type of smoked duck that is cured and dried over a camphor wood fire. The ducks absorb all the amazing smoky, herbal aroma from the camphor smoke. You can buy little packets of the shredded smoked yecha duck meat to take home. It's so rich and flavorful!For vegetarians, Ganzhou has many amazing veggie dishes too. There's a delicious dish called "chanchanmian" which is made from slippery glass noodles tossed in a savory sauce with mushrooms, carrots, baby corn and other vegetables. So fresh and tasty!One essential Ganzhou veggie dish is "suanmao", which are fresh bamboo shoots that are boiled and seasoned with chili oil, garlic, and vinegar. The bright flavors and crunchy texture are so good. During bamboo shoot season, my mom always pickles extra jars of suanmao to enjoy year-round.No meal in Ganzhou would be complete without some pickled veggies on the side like radishes, cabbage, mustard stems, and more. The pickled snacks and sides are called "jiawei" which literally means "morsels" to nibble on while eating yourmeal. The blend of sour, spicy, salty flavors in the pickled veggies is so perfect with the rich Ganzhou meat and rice dishes.For dessert in Ganzhou, you have to try some "tangyuan" which are sweet rice balls filled with black sesame, red bean, peanut or other fillings. They get served in a hot gingery soup broth. Eating is such an essential part of the culture back home.I really miss the amazing food from my hometown when I'm away at school in another city. Luckily, there's a great Ganzhou restaurant close to my school, so I can still get my fix of luobogao, gan pork, and other hometown specialties.
