据FAO 标准,藜麦蛋白有均衡的氨基酸组成,含有人体必需的9种氨基酸,相较于其他谷物和豆类含有高水平的赖氨酸和蛋氨酸。
因此,越来越多的研究关注藜麦蛋白的营养价值和功能特性。
本文主要综述了有关藜麦蛋白的组成、营养价值、提取方法及乳化性、起泡性、凝胶性、消化性等功能特性的研究进展。
除此之外,由于藜麦蛋白改性之后的功能特性增强,本文也概述了藜麦蛋白的物理和生物改性对藜麦蛋白功能特性的影响。

摘要摘要随着当今社会发展,老龄化趋势逐渐加剧,老年人健康问题愈发引起人们的关注。
神经退行性疾病作是一种会导致神经细胞的退化和死亡的疾病,如阿尔兹海默症,是威胁老年健康问题的主要因素,女性因为绝经期后雌激素匮乏,女性阿尔兹海默症患病率远大于男性。
近年来,利用天然食品功能组分干预神经退行性疾病已成为食品分子营养领域的研究热点。
芝麻素是一种从芝麻中提取的木质素,属于植物雌激素,具有抗抑郁和神经保护作用。
本研究为了解芝麻素作为一种植物雌激素在减轻认知障碍中的作用机制提供了线索,并提出了补充芝麻素可能的有益阶段。
本文主要研究内容如下所述:(1) 以6月龄和9月龄的雌性APP/PS1模型小鼠,探讨了芝麻素对小鼠认知障碍的改善作用。
试验采用芝麻素(0.05% ,w/w)对小鼠进行12 周干预,通过新物体识别测试行为学检测手段对实验动物的学习记忆能力及认知功能进行评价,试验结果显示芝麻素能够改善12月龄的雌性APP/PS1小鼠的认知障碍,但没有改善9月龄的小鼠的认知障碍。
(2) 以6月龄和9月龄的雌性APP/PS1模型小鼠,探究了芝麻素对APP/PS1小鼠脑内β淀粉样蛋白聚集和神经炎症的干预作用,实验结果表明芝麻素显著地改善小鼠脑部β淀粉样蛋白聚集,抑制胶质细胞的过度激活及相关炎症因子如IL-1β和IBA-1等表达,并且显著促进突触后密度蛋白95(PSD-95)表达,增强突触可塑性,改善神经损伤。
此外,芝麻素还能显著降低12月龄小鼠脑部淀粉样前体蛋白(APP)表达并且增加了9月龄和12月龄小鼠脑部重组人胰岛素降解酶(IDE),从而抑制β淀粉样蛋白的合成和对β淀粉样蛋白的降解。
通过蛋白免疫印迹实验结果显示,芝麻素补充能够激活小鼠脑内AKT-PI3K信号通路。
(3)以SH-SY5Y细胞为研究对象,探讨了芝麻素发挥神经保护作用的相应机制。
在体外实验中,以20 μM的Aβ25-35及0-50 μM 浓度梯度的芝麻素处理SH-SY5Y细胞,结果表明芝麻素显著抑制Aβ25-35诱导在SH-SY5Y细胞中的神经毒性反应。

本研究以阿拉伯胶(Gum Arabic ,GA )为对照,通过液滴大小、Zeta 电位、微观结构和FFA 释放量来评价CNP-P2乳液体外胃肠道消化行为。
结果表明,CNP-P2乳液在模拟胃消化中能保持稳定。
CNP-P2乳液的游离脂肪酸(Free Fatty Acid ,FFA )释放量为32.41%,GA 乳液的最终释放量为31.68%。
