中级口译阅读写作能力unit2foodreadingBThePleasuresofEatingThe Pleasures of Eating1 The first man who cooked his food,instead of eating it raw,lived so long ago that we have no idea who he was or where he lived. We do know,however,that for thousands of years,food was always eaten cold and raw. Perhaps the first cooked food was heated accidentally by a forest fire or by the molten lava from an erupting volcano. No doubt,when people first tasted food that had been cooked,they found it tasted better. However,even after this discovery,cooked food must have remained a rarity until man learned how to make and control fire.2 Early peoples who lived in hot regions could depend on the heat of the sun to cook their food. For example,in the desert areas o the southwestern United States,the Indians cooked their food by placing it on a flat stone in the hot sun. They cooked pieces of meat and thin cakes of corn meal in this fashion.3 We can surmise that the earliest kitchen utensil was a stick to which a piece of meat could be attached and held over a fire. Later this stick was replaced by an iron rod or spit which could be turned frequently to cook the meat on all sides.4 Cooking food in water was impossible before man learned to make water containers that could not be destroyed by fire. The first cooking pots were reed or grass baskets in which soups and stews could be cooked. As early as 1600 B. C.,the Egyptians had learned to make more permanent cooking pots out of sandstone. Many years later,the Eskimos learned to make similar pans.5 The North American Indians adopted a different method of cooking their food. They placed their food in skin bags or birchbark kettles,then dropped hot stones in with the food. When the stones cooled off,the Indians replaced them with hot stones. The Indians continued to add fresh hot stones to the containers until the food was cooked.6 Records left by the ancient Egyptians show that they knew how to cook food in many ways. Their frescoesportray people baking,boiling,roasting,frying and stewing food. The Egyptians also knew how to preserve meat by smoking and salting it.7 The Bible tells us that the Jews were skilled cooks. The Book of Genesis,for instance,relates the story of Rebecca,who put food in a pan and placed it over burning charcoal. The Jews also knew the art of baking at an early point in their history. Carvings left by the ancient Jews show dough being put into a small round oven to be baked.8 History reveals that early Greeks knew how to cook porridge and how to make flat,round loaves of bread from wheat and barley. They used olive oil as a cooking grease. Since food was scarce in the Greek peninsula,the Greeks expanded their territory in order to increase their food supply. From the people they conquered,the Greeks learned how to cook and enjoy many new foods.9 The Romans were famous for their elaborate banquets. From all over their empire,they imported foods that they cooked over stone hearths or grilled over charcoal. The fact that Romans also baked their food is evident from the ovens found in the ruins of Pompeii.l0 In the troubled times of the Middle Ages,trade between countries dwindled. People lived on what they could grow in their gardens or bring back from the hunt,and the food they ate wassimply prepared. Beans and turnips were the main vegetables eaten in Europe,and honey was used to sweeten food. The manuscripts of the Middle Ages tell us that boiling and broiling were the two most common methods of cooking. Bread was baked in the homes of rich people or in public bakeries,but the common man had no oven in his home. People killed their livestock,hoping to preserve it through the winter by salting it. However,salt was expensive and people did not always use enough of it to keep the meat from spoiling.11 During the period of the Crusades ,many new foods were discovered by Europeans who traveled to the East. When the Crusaders returned to Europe,they wanted to continue eating the new things they had tried. As a result,trade developed again between Europe and Asia Minor.12 It was not until the nineteenth century that the masses of people in Europe changed their ways of cooking. This change took place because the cast-iron cooking stove was invented. Until the stove came into use,fireplaces and spits had been in general use; sometimes a baking oven had been built into the sides of the fireplace. In northern Europe,stoves had been used for several centuries for heating. However,it was a long time before a stove was developed that would cook and bake,as well as heating. As a consequence,men began to live together. Then,when men learned to grow plants for food,they settled in communities next to the fields. More people lived in the places where food grew the best. Progress has been greater in those parts of the world where there is more food to eat.15 Many wars have been fought by poor,hungry countries which try to conquer rich countries for their food. Governments have fallen because the people of the country were hungry; starving people will follow any man who promises them food. Rulers who want to stay in power try to feed their people well,because,during times of famine,there are often revolutions.。
