开锅的程序在用之前比普通锅具要多个开锅的程序。
第一步先把锅用热水冲下第二步后把锅放在炉上用小火低温加热将水煮干关火,把食用油滴入锅,薄薄的涂满整个锅内。
第三步开小火低温加热2到3分钟,关火,待降温后用干净的棉布擦干净。
第四步这些加热的油已经渗透到锅身,目的是日后烹饪的食物可以保留原味且不易粘锅。
好了,经过了开锅的步骤,就可以开始使用了。
使用心得1.非常重的一口锅,但是正因为重,所以在烹饪食物的过程中,基本看不到有水蒸汽跑出锅外。
所以甚至可以不加水,利用食材本身的水分就可以烹饪食物。
2.煮肉类的食物非常嫩,而且省时间。
煮蔬菜可以很好的保持蔬菜的颜色.3.一锅可以当多锅用,非常好使。
4.只能用中小火,不能用大火,否则会伤到珐琅涂层。
每次使用前需要热锅,先用小火加热两分钟,再开始烧菜。
要使用隔热手套,以免烫到手。
执行程序PROCEDURES:1、早班:A.由冷菜主管或热菜主管跟夜班员工进行工作交接,并按规定签字及取钥匙;B.进入厨房签到;C.对所有食品进行检查(是否腐败变质);D.早餐及早餐自助餐冷菜部分的准备(自助餐包括水果拼盘、罐制水果、谷类、牛奶果汁、冷菜拼盘等),保证有充足的后备,并要求在早上6:30 前全部按排摆到自助餐展台上,准备充足的食品后备,同时为冷菜早餐零点提供源料。
E.在早餐、自助餐准备完后,可准备部分午餐零点及自助餐食品,但不要影响早餐零点及早餐自助餐冷菜食品的补充,补充信息由厨房派专人负责。
F.早上八点左右可将当日提货单送到货库部,上午九点派人将所提物品取回并符合冷菜食品的要求。
走零点过程中,由冷菜主管或领班叫单,出品后,主管要认真留意出品质量,后由服务员送出。
G.自助餐结束后,撤回所有冷菜食品并做正确安排冷菜员工吃午饭。
H.在上午11:30前将所有午餐自助餐冷菜出品全部摆到自助餐展台上,包括水果拼盘、冷肉拼盘、寿司、刺身.色拉台、奶酪拼盘等,同时零点冷菜餐前备餐工作同时完成,要保证自助餐食品后备充足随时填加,并有厨房专人提供填加信息,在走菜散点过程中,主管或领班负责冷菜叫单,出品时要严格检查出品是否符合出品标准,后由服务员拿出厨房送客人,在自助餐及零点结束后,协助晚班厨师将自助餐冷菜食品撤回并做正确处理及安排,并与晚班做好交接工作,经主管同意后方可签字离开下班,此时冷菜早班结束。
2、晚班:A.晚班到岗后首先签到,签到后与早班一起将自助餐冷菜食品取回并做妥善安排,在早班下班前做好全面的交接。
B.然后进行冷菜零点及晚餐自助餐的准备工作,在下午五点前摆放在自助餐展台上,包括水果拼盘、冷肉拼盘、海鲜拼盘、色拉台等食品,并保证有充足后备,并有专人提供补充食品信息。
同时,做好零点的餐前工作,在走零点时,由主管负责叫单,并严格检查出品质量是否符合出品要求,最后由服务员拿出厨房。
C.工作结束后,将冷菜食品取回并做妥善处理,将冷菜剩余所有食品进行大检查,包括质量及数量,按不足的食品及需量填好所需食品领取申请单交给部门主厨,同时填好内部转流单并由部门主厨同意后,下班前交给加工间,将第二天早餐所需食品提回,并放在早餐专用冰箱内,为早餐做准备。

The flame ignites.2.Release the control knob.3.Turn the control knob to the required setting.If it does not come on, turn the control knob to the off setting and repeat the steps above. This does not pose any risk and does not indicate a malfunction. They will disappear in time.An orange-coloured flame is normal. This is caused by the presence of dust in the atmosphere, spilt liquids, etc.The kitchen will become hot and humid when this gasappliance is used.
