干炸响铃Stir-Fried Beancurd Rolls Stuffed with Minced Tenderloin
从前有位英雄专点此菜佐酒,店里的豆腐皮正好用完了。英雄不愿败兴,听说豆腐皮在富阳泗乡定制,即上马扬鞭取回豆腐皮。店主深为感动,为他精心烹制,并特意做成马铃形状。从此,炸响铃就流传开了。

绿茶之魁———“龙井”的嫩叶制成:虾
仁玉白,“龙井”翠绿,色泽典雅,滋味
独特。三四游客,点上以上三菜,配以
杭州特产———西湖莼菜汤,再加一只
宜于下酒的用豆腐皮包里脊肉,精炸
的、香甜爽脆的炸响铃,再要上两瓶
西湖桃源岭泉水酿制的杭州啤酒,边
斟边吃,总共化费不过三四十元钱,
即可品尝到杭州最为脍炙人口的名
菜。美景美食,一餐之后,此时您会对
“上有天堂,下有苏杭”的民谚有真情
实感,终生难忘。
如想实惠一点,不妨可点青椒里
脊丝(此菜传自清代大将军年羹尧内
府的膳房)、鱼头浓汤、杭三鲜(以火
腿片、鸡块、肉丸、鱼丸、大虾、竹笋等
烩成)。三四游客配以啤酒。也不过十
来元钱,亦吃得味美可口,同样能领
略杭菜风味特色。
三、位居闹市的全素菜
馆———素春斋
游览西湖的外地游客,有不少中
老年人,出于口味爱好、身体因素、宗
教信仰等原因,不少人喜食清淡的素
食。位居城内最繁华的延安路上的素春斋菜馆,可说是杭州城首屈一指的
素食菜馆。
素菜在杭州有源远流长的历史。
早在七八百年前,杭州的素菜就闻名
全国了。南宋御街不仅有专门的素菜
馆,且西子湖畔众冬的庵庙里,还有
专门的斋堂,供应丰富多采的素食给
香客们食用。南宋杭州人林洪写的
《山家清供》一书,就记载了许多南宋
素菜的烹饪技艺和方法。如三四位游客去杭州素春斋菜馆
就餐,可叫油焖春笋(最好春夏季节
去吃)、香菇素鸡、素什锦、炒干丝、蘑
菇豆腐等菜,再加个紫菜腐衣汤。以
上素菜所用原料,均是杭州城内所产
的新鲜豆腐皮、豆腐百叶、鲜嫩竹笋
及精选香菇、蘑菇、素鸡、豆腐干、金
针、木耳,再配以小磨麻油、全素高
汤,经名师烩制而成,其口味清淡鲜
美。以上菜肴再加道地泉水啤酒,亦
不算贵,但可吃得酒足饭饱,惬意而
归,使您有再次问津之意。
四、脍炙人口的南宋古
都小吃店
如不愿去菜馆等候,喜欢随便吃
一点,可去街头巷尾个体小店品尝小
吃,如千张包子、牛肉粉丝汤、甜酱豆
腐干、菜卤麻油豆腐、油汆臭豆腐干、
小笼包子、松丝汤包、吴山酥油饼、油
