学校食堂食品添加剂使用管理制度
一、使用食品添加剂应在技术上确有必要，并在达到预期效果的前提下尽可能降低使用量。不得破坏和降低食品的营养价值，不得用于掩盖食品的缺陷(变质、腐败)或粗制滥造欺骗消费者。
二、应按照GB 2760《食品安全国家标准 食品添加剂使用标准》规定的食品添加剂品种、使用范围、使用量使用食品添加剂。不得采购、贮存、使用亚硝酸盐（包括亚硝酸钠、亚硝酸钾）等国家禁止在餐饮业使用的品种。
三、食品添加剂要专柜（位）存放，并标注“食品添加剂”字样。用容器盛放开封后的食品添加剂的，应在容器上标明食品添加剂名称、生产日期或批号、使用期限，并保留食品添加剂原包装。开封后的食品添加剂应避免受到污染。
四、使用 GB2760规定按生产需要适量使用品种以外的食品添加剂的，应专册记录食品名称、食品数量、 加工时间以及使用的食品添加剂名称、生产日期或批号、使用量、使用人等信息。
五、使用 GB2760有最大使用量规定的食品添加剂，应采用称量等方式定量使用。
