葡萄汁的主要成分是糖和有机酸,相对糖而言有机酸的含量非常低。
而糖在从葡萄到葡萄酒的工艺过程中却扮演这极为重要的角色,可以说没有糖就没有葡萄酒。
葡萄中除少量非发酵性糖(不足2克/升)外,其中的糖几乎全部是葡萄糖和果糖。
这里和大家分享下葡萄中葡萄糖和果糖的形成,更便于酿友们理解后期讲述的如何选择补充外源糖。
葡萄汁中的糖,主要是叶片中光合作用合成的蔗糖和植物中积累的淀粉通过下列方式分解而成。
C12H22O11(蔗糖)+H2O→C6H12O6(葡萄糖)+C6H12O6(果糖)【可发酵糖】一般来说,葡萄中的糖和有机酸是成反比例变化的,随着葡萄的成熟,部分有机酸逐渐转化为可发酵糖。
因此酿友们购买葡萄时一定要选择成熟度好的葡萄,成熟度越好糖越高酸越低,当然不同品种之间是有一定差异的。
正常的酿酒葡萄成熟时糖可以达到150-250g/L.一般来说葡萄中的糖主要几种在果肉中,当对葡萄进行压榨时,最先流出的汁就是果肉中部的,因此自流汁中几乎含了葡萄中80%以上的糖。
对于自酿朋友而言,带果肉果皮一起发酵自然是最好的哦,不但糖度充分利用,颜色和香气包括营养都好哦,但是这里提醒的是,发酵时间不能过久,果肉果皮都融化了,澄清就成了大问题。
我们知道葡萄中没有糖就没有葡萄酒,这是因为葡萄中的糖几乎是葡萄酒中酒度的唯一来源。
也就是糖经过酵母菌代谢转化为酒精进而赋予葡萄酒表现的酒度。
这对于大多数酿友来说都是很容易理解的,但是在网店开业至今不到2个月的时间里,还是经常被酿酒问到糖和酒度的关系,很多酿友都是从网上看的山寨版葡萄酒工艺,不知所以然的加了很多糖,交流起来时,却不知道加糖的真正目的,以为是为了提升甜味的。
后续会具体讲解自酿加糖的一些细节。
这里我们先了解下葡萄中可测糖和酒度的关系。
葡萄中可测糖预测了所发酵葡萄酒的潜在酒度。
通常工艺下17-18克/升糖可以转化一度酒精(也就是一个酒度),同时受以下条件影响:1.干红葡萄酒酿造中因为皮渣分离会损失部分酒度,因而往往按17g/L糖产生一个酒度来计算和预测。

糖度资料1.黄酒标准GB/T13662-2000中的指标为“非糖固形物”并非为“可溶性固形物”,非糖固形物的定义为:试样经100℃~105℃加热,其中的水份、乙醇等可挥发性物质被蒸发,剩余的残留物即为总固形物,总固形物减去总糖即为非糖固形物。
2.由于黄酒含有酒精度,用折光法测定有一定误差。
需要折算很麻烦。
3.手持糖度计与阿贝折光仪测量偏差差多少?手持糖度计与阿贝折光仪测量精度稍稍有些区别,只要经过检定或校准,他们的结果应该是一致的。
4.白利度(Brix或Bx)是我国及英国等一些国家通用的检测含糖量的标度,白利度是指含糖量的重量百分率,如白利度55°Bx即100g糖液中含糖55g,55°Bx也表示为55%,但是并非指容积100mL中的55%。
如白利度50°Bx为相对密度1.232,就是说此糖液100mL的重量为123.2g,此123.2g糖液中50%(61.6g)为糖,50%(61.6g)为水。
白利糖度值是以"折射指数"和"特定重力"为标准的,它以纯净水作为标准点--零点,当其它的物质溶解于水,特定重力就增加,数值就上升到零点以上。
所以,溶解于水的固体浓度越高,白利糖度数值越高。
