【关键词】中国美食 舌尖上的中国 英译 探析一、引言本文将从《舌尖上的中国》这部探索与发现中国美食的纪录片入手，通过对比研究该片第一季和第二季英文版中出现的400余种中国美食，探析中国美食英译的原则和方法，旨在带给广大从事翻译教学或工作的人们思考与启发。
二、《舌尖上的中国》美食英译研究翻译家彼得纽马克根据语言所具有的不同功能将翻译文本分为表达型文本，信息型文本，呼唤型文本，审美型文本，交际型文本和元语言功能型文本六大类。
在此基础上，纽马克提出了两种翻译模式：语义翻译和交际翻译。
本文所涉及的美食翻译属于信息型文本和呼唤型文本，是交际翻译的一种。
交际翻译是一种强调目标语的翻译，它旨在为读者创造出与原语同样的效果。
通过对《舌尖上的中国》美食英译的观察研究，笔者发现其英译正是采用了交际翻译的原则，使读者了解到该美食的烹饪方法，原材料和味道，从而唤起读者的品尝欲望。
下面我们就来一一了解各种美食的英译方法：1.直译法。
王秉钦教授曾根据中国美食的特点将其命名划分为现实主义的写实手法和浪漫主义的写意手法。
其中，大部分中国美食的命名都是依据写实手法，顾客通过美食名称就能了解到其原料，配料，烹饪，味道及产地的信息。
这种情况下，直接译出相关信息就起到了准确传递原语功能的效果。
具体来说，直译可分为以下几种情况：(1)烹饪法动词过去分词+主料，如：烤松茸：roasted matsutake 油焖春笋：braised bamboo shoot ；(2)烹饪法动词过去分词+主料+with+配菜，如：酸菜鱼：boiled fish with pickled cabbage and chili ；(3)主料+烹饪法动词过去分词+in+汤汁，如：苏州头汤面：Suzhou noodles stewed in first-time soup 蜜汁火方：ham Braised in Honey Sauce ；(4)地名+主料，如：雷山鱼酱：Leishan fish sauce 潮州春卷：Chaozhou spring roll ；(5)主料+器皿或器皿+主料，如：荔芋腊鸭煲：taro cured duck pot 鱼丸紫菜煲：fish seaweed pot ；(6)形容词+主料，如：酸辣藕丁：hot and sour lotus root 糖醋排骨：sweet and sour spare ribs2.音译。

国外拍摄了越来越多中国题材的纪录片。
在引进国外纪录片时，字幕翻译起到了举足轻重的作用。
本文的案例是国新办纪录片《探秘中国古典园林》英译汉项目，纪录片用外国人的视角介绍了苏州古典园林和中国的风土人情。
通过分析纪录片字幕特点、字幕翻译的时空限制以及英译汉中文化还原等要素，本文对比初译和审校两种译文，从词汇、句子、语篇三个层面上探讨了纪录片字幕英译汉的策略。
242文化图式视角下探析中国饮食民俗文化的翻译方法——以《舌尖上的中国2》翻译为例范胜君 陈 娜 唐利平 西华大学摘要：中华美食是中国传统文化的一部分，对外介绍中国饮食文化也就是把中国的传统文化介绍给世界。
但是文化差异的存在也导致中西方观众构建的文化图式不同，这就为翻译带来了难题。
本文以《舌尖上的中国2》的翻译为例，分析翻译实践中处理文化图式对应，相异，缺省的翻译方法。
关键词：文化图式；舌尖2；美食；翻译方法为了传承中国饮食文化，同时满足外国人对中国饮食文化的好奇，CCTV 精心打造了两季美食记录片《舌尖上的中国》。
作为外国人了解中国文化的窗口，这部纪录片带领全世界的观众一起品味中国特色美食，了解中国民俗文化，感受中国百姓积极乐观的生活理念。
纪录片中介绍了1000多种中国美食，给观众讲述了菜名的来历，选用的食材，烹饪技巧以及每道菜背后的故事。
片中的菜名以及一些表达展现了中国传统文化元素，这就使有着不同语言文化背景的外国观众难以理解接受，阻碍了中国文化的对外传播。
因此，对该记录片的翻译研究就显得尤为重要了。
尽管一些学者对该片的翻译已做了一些研究，但目前的研究主要是在目的论，功能对等，译者主体性等理论指导下进行的，而本文试图从认知心理学角度研究该纪录片的翻译，将文化图式理论应用到《舌尖2》的翻译研究中，探析恰当地处理片中文化图式的翻译方法。
一、图式理论(一)定义图式(schema)一词源自希腊词汇，表示大体的形状或图案。
伊曼努尔·肯特(1724-1804)认为图式是将某一纯粹的非实证的概念与对某个事物的大脑印象相结合的过程上的控制，它可能是通过一段时间的想象产生的(Ehsan Shaghasemi & D. Ray Heisey ， 2009)[1]。
这一理论的发展归功于英国著名心理学家F.C.Bartlett ， 他在早期著作《记忆》中提到图式理论，企图说明记忆并非死记硬背或再产生的过程，而是一个保留事件要旨，再根据总印象重建细节的过程(F. C.Bartlett ， 1932)[2]。
