萝卜烧肉 ---- 一叶落而知天下秋一肉上桌而知冬来到材料:五花肉一斤半,白萝卜半根,冰糖8克,老抽10毫升,料酒少量,花椒20粒,大料两粒(八角),桂皮一小块,葱,姜,蒜,盐1,把五花肉切成麻将块大小。
五花肉我们要选择肥肉与瘦肉比较均匀的最好,太肥的,吃起来比较油腻;太瘦,口感不好又不够香。
2,把切好的五花肉焯熟。
下面主要讲讲炒糖色3,在锅中放入平时炒菜两倍的油,放入冰糖,中火用锅铲晃动冰糖。
4,差不多30秒钟,用锅铲讲冰糖压碎,继续翻炒。
5,炒到糖变成棕红色,糖翻泡的时候,我们的糖色就好了,如果再炒,糖就糊了。
6,这时候,我们要将滤干水份的五花肉迅速放入锅中翻炒挂上糖色。
注意啊,一定要滤干水份,不然很危险,油会溅出来伤到自己。
江西农家苋菜干烧肉 ---- 土里土气的味道原料:五花肉500克,苋菜干150克,姜10克,八角1个,香叶2片,油、酱油、料酒、冰糖、盐、鸡精各适量做法:1、苋菜干用水淋干净,放入清水浸泡至软、捞出沥干水(浸苋菜干的水不要倒掉),五花肉切成4厘米长2厘米厚的块;(图1-3)2、热锅中倒入油,7成热时下姜炝锅,再下五花肉炒至变白色。
炒肉同时,把泡苋菜干的水放进微波炉里烧开(高火3-4分钟)。
在锅中依次放入料酒、酱油、冰糖,放香叶、八角,加入烧开的泡苋菜干水(水没过肉面为宜),大火烧开后改小火煮40分钟左右(把肉移至砂钵里去焖,会更香)。

最后大火收汁,根据咸淡放盐调味,加鸡精,盛起。

小贴士:这个菜一定要将百叶结煮透,这样才好吃。
百叶结烧肉
材料:。
带皮五花肉600克、百叶结适量。
调料:。
八角(大料)1-2个、桂皮1小块、姜3片克、香葱2根克、冰糖5粒、料酒1汤匙(15ml)、老抽1汤匙、生抽1汤匙(15ml)、盐1小匙。
做法:。
1、准备工作,事先在盆中装入凉水,加入一大勺料酒,放入五花肉,浸泡15分钟。
2、五花肉放入热水锅里焯一下,捞出。
3、捞出后晾凉,切成均匀的方块。
锅里放一点点油,放入五花肉块小火慢慢煸炒。
4、小火煸炒至五花肉表面微微变色出油,将多余的油倒出,盛出五花肉待用。
5、锅洗净,放入1汤匙(15ml)的油,放入冰糖煮至冰糖液颜色变深。
6、倒入炒过的五花肉块,翻炒均匀。
7、再加入料酒、生抽、老抽。
8、翻炒均匀。
9、加入没过肉量的开水,大火烧开后撇去浮沫。
放入姜、葱、八角、桂皮。
10、放入锅中用小火炖煮(我用的是珐琅铸铁锅,也可以用砂锅或者直接用炒锅煮)。
11、待肉煮至七成熟时(约40分钟),加入百叶结同煮。
12、炖至五花肉软熟,转大火收稠汤汁,加少许盐调味,撒葱花即可。
灰灰小贴士:。
◎五花肉先放料酒里浸泡可以去腥(也可以切块后浸泡),用水焯一下,去除表面的脏东西。
◎用小火煸炒五花肉可以将油脂逼出来一部分,加之我挑的肉相对比较精,所以吃起来不会油腻。
◎炖肉时要加热水。
◎炒五花肉出来的油可以用来炒菜、拌面等很香。
◎炒糖色也可以用白糖,嫌麻烦的也可以直接跳过炒糖色这一步。
