加工过程/步骤:Process steps/procedure

A0-I0原材料接收:所有食品原料由供应商运输车直接送至工厂,经检验合格后接收(应符合:原材料标准),原料分别存放在卫生、干燥的原料仓库。注意:运输车辆应清洁、密封和保养良好;供应商必须提供产品卫生证明、产品合格证、标签及检验报告;含过敏原产品特殊标示,花生和坚果类产品还要存放在专门地方,平时上锁管理,一般人禁止入内。

A0-I0 Receival of raw materials: all food raw materials and should be delivered to our factory by the supplier. After they are inspected and considered qualified, they should be kept in hygiene and dry warehouse for raw materials. Be noted that: the transporting truck should be cleaned, sealed and in good condition. Suppliers should provide product hygiene certificate, label and inspection report. Product containing allergens should be specifically labeled. There should be a place to store peanuts and nuts exclusively. It should be locked and unnecessary staff is not allowed to enter.

J0,L0 包装材料接收(CCP1):所有包装材料由供应商运输车直接送至工厂,经检验合格后方可接收(如果是标签,特别留意过敏原信息是否准确),包材分别存放在卫生、干燥的包装材料仓库。注意:运输车辆应清洁、密封和保养良好;供应商必须提供产品卫生证明及检验报告;包装材料按内包装和外包装材料分开存放,内包装材料应密封好以防止受到污染,

A1验收合格的原辅料贮存在仓库指定的位置并标识清楚,原辅料严格按照使用期限要求。

A1 Accepted and qualified minor raw materials should be kept in specified place and clearly labeled. Minor raw materials should be used strictly according to their shelf life.

A2-I2称量:食品原料、香精、填充物在加工使用前,应根据配方,用校准合格的电子称称量,取要求的用量,倒入清洁的盛装容器中(含过敏原产品要注意容器的清洗)。

A2-12 weigh up: before processing raw materials, flavoring and other materials, use qualified and calibrated scale to weigh them and take required amount according to recipe. Put them in a clean container (pay attention to the cleaning of allergen containers).

A3溶解:将称量好的原材料投入溶解罐里,当溶解缸的温度达到标准后(标准温度45±2℃),启动搅拌器,使原材料充分溶解。

A3 dissolve: Put weighed raw materials into dissolving tank. When the tank reaches standard temperature (standard temperature is 45±2℃), start the mixer so that the raw materials fully dissolve.

A4过筛:溶解好的原料通过筛网,将杂物以及未溶解的巧克力除去。筛网的目数为20目。

相关人员按要求填写《筛网检查记录表》

A4 sieve: sieve the raw materials after they dissolve. Remove the remaining and undissolved chocolate. The sieve should be 20 meshes. Related staff fill the .

A5调温:将溶解好的原材料通过管道传输送至调温机进行调温。调温指数理想范围3.5-6,结晶温度≥22℃;调温指数可接受范围1.5-7.5,结晶温度≥21℃。

A5 temper: dissolved raw material is transmitted to temperature machine through pipes for

tempering. The ideal tempering index range is 3.5 to 6, crystallizing temperature ≥22℃. The acceptable range of tempering index is 1.5 to 7.5, crystallizing temperature ≥21℃.

A6过筛(CCP2):为下工序顺利开展,调温好的巧克力浆再次过大于或等于20目的筛网,相关人员按要求填写《筛网检查记录表》。

A6 sieve (CCP2): sieve the tempered chocolate with sieve of no less than 20 meshes. Related staff fill .

A7浇注成型:经过再次过筛后的巧克力经管道送至浇注机进行浇注,或者雕花后巧克力再进行浇注。注意保持模具清洁,完整。浇注后产品经过振动带进行振动,以排除气泡。浇注成型的不良品和边角料使用专用容器盛装,生产结束后进行报废处理。

A7 deposit and form: transmit the re-sieved chocolate through pipes to depositing machine for deposit. Pay attention to keeping mould clean and intact. After depositing, product will pass through vibration belt to eliminate air bubbles. Put defective product and fragments from depositing and forming in an exclusive container. Scrap them when production ends.

A8雕花:再次过筛后的巧克力或涂层的半成品或成型后的半成品传送到不锈钢工作台上,进行人工雕花或者机器雕花。雕花产生的巧克力边角废料使用专用容器盛装,生产结束后进行报废处理。

A8 decorate: transmit re-sieved chocolate or wip for enrobing or wip after forming to stainless steel table. Manually decorate them. The wastage from decoration should be held by exclusive container and be scrapped after production.

A9涂层:再次过筛后的巧克力经过涂层机进行涂层,注意机器的清洁及产品的完整性。

A9 enrobe: enrobe with re-sieved chocolate. Pay attention to the cleanness and intactness of product.

A10中空:将巧克力浇注到模具中,合模。放在震台上使巧克力涂到模具各部。将模具放在摇摆机上使巧克力均匀涂于模具中。中空成型的不良品和边角料使用专用容器盛装,

生产结束后进行报废处理。

A10 spin: deposit chocolate to mould. Match top and base mould together. Place mould on vibration platform so that chocolate reach all over the internal mould. Take mould to spinning machine so that chocolate evenly coat the inner mould. The defective product and fragments from spinning should be held by exclusive container and be scrapped after production.

A11/A12冷却/脱模:浇注成型后或者涂层后的产品进入冷冻塔或者冷冻隧道进行冷却成型。冷冻塔冷却时间大概40分钟,冷冻隧道冷却时间大约15分钟,冷却后的产品表面温度必须达到14℃以下,以便利于脱模。将冷却后的产品脱模,注意保证产品的外观。脱模后半成品完好无损,符合QAS的要求,暂存于半成品区域;脱模后,半成品有缺陷,不符合QAS要求,存放在有不合格标识的容器中,累积到一定量后回缸再重复利用;落地产品、不同类型(比如、白和牛奶巧克力)巧克力混在一起,很难分开,直接报废处理。

A11/A12 chill/demould: transmit deposited or enrobed product to cooling spiral or cooling tunnel for the process of forming. The time for mould in cooling spiral is about 40 minutes, cooling tunnel 15 minutes. Product surface should be below 14℃ after cooling so it’s easy to demould. Demould chilled product. Pay attention to product appearance.

A13金属检测(CCP3):把产品放在金属探测仪的输送带上进行金属探测,每一个产品都必须经探测合格的产品才能包装。若发现有金属异物,应立即捡出,单独隔离放置,查明原因并进行纠正预防分析记录

A13 metal-detect (CCP3): put product to the conveyer belt of metal detector for metal detection. Every piece of a product should be metal-detected and only the qualified can be packed. If metal object is detected, it should be pick out immediately and kept separately. Investigate the cause and record the analysis of corrective / preventatives action

A14称重:内包前的产品进行称重,要求使用校准合格的电子称,注意电子称表面的清洁。A14 weigh: weigh product before it’s inner-packed. The scale used should be calibrated and qualified. Pay attention to the cleanness of scale surface.

L1吹尘、臭氧消毒:内包装材料在使用前进行吹尘、臭氧消毒,以保证其清洁。

L1 dust: dust and disinfect by ozone inner packing materials before usage to ensure its cleanness.

A15内包装:将称重好的产品按照工艺要求,利用人工或者包装机器装入内包装材料,内包装上的不同时间和产品的喷码必须留样,以方便产品追溯。

A15 inner-pack: pack weighed product with inner packaging material according to packing spec. The samples with different dates and spray codes on inner packaging should be kept for
